Vegetarian อาหารเจ
There is a long tradition of vegetarianism in Thailand, which is closely linked to Buddhism. Few people in Thailand are strictly vegetarian, though most like to eat vegetarian food now and again. It is largely true to say that only the strictly religious, are true vegetarians. If you go to Thailand and declare yourself a vegetarian then it may be assumed, that you too are a devout Buddhist, so don't go and spoil it by ordering a beer!

The religious connection has done nothing to compromise the standard of food, mediocre local food simply "does not survive in Thailand! The concept of vegetarian food is to produce meatless substitutes for all traditional Thai dishes without diminishing the texture, flavour or overall quality of the food.

We have chosen a small selection of popular Thai vegetarian dishes for you to try. We hope that you enjoy your meal!

Satay   สะเต๊ะ

Satay originates from Indonesia, but hasSatay become so popular in Thailand, that it feels right to include it in our menu. This recipe was given to me by an Indonesian student, Tamboonan, who became a good friend while we were studying for our Masters Degrees at Cranfield Institute of Technology Uk in 1991. Our Satay is authentically Indonesian, and perhaps slightly different and stronger in flavour, than most Thai versions available. I have unfortunately lost contact with Tamboonan, but I hope that he has been successful, with gas turbines, rather than food, and thank him for this recipe.
This is the all time favourite dish of my brother-in-law, Jim, who used to ask for it, when ever he saw us. I have given this recipe to him and his wife, Brigitte, who we se much less frequently now.
If you like Satay and haven't yet been to Thailand, then you should book your ticket now; whole shops and stalls specialise in selling it, and you pay only a few pence for each stick. On our last visit, we managed to eat 80 sticks with ease, and this was a "mid morning snack".

Thai curries: are made by pounding fresh herbs to make a paste before cooking. The distinctive ingredients are: Galangal, Kaffir Limes, and Lemon Grass. The different colours and flavours are derived from the different herbs and spices used, the reds and greens are from the varieties of chillies used. The creaminess comes from the addition of coconut milk.

Green curry with chicken and seasonal vegetables. One of the most popular and distinctive curries, it is almost essential to have it at a large celebration.
2. Massaman Nua  แกงมัสมันเนื้อ  £8.55    Medium 
A Rich Beef curry with peanuts and potatoes, included in most wedding celebrations, as it is difficult to prepare, and uses the rare and expensive potato.

Gaeng Keow Wan Gai

3. Gaeng Garee Gai  แกงกะหรีไก่   £7.45   Medium
A mild and creamy Yellow Curry with chicken and potatoes, it is very easy to eat, and is my mother-in-laws favourite.
4. Gaeng Phed Pet Yang  แกงเผ็ดเป็ดย่าง  £8.25    Medium
Red curry with roast duck and tomatoes, the richness of the curry is nicely counterbalanced by the acidity of the tomatoes.
5. Gaeng-Kua-Sapparod  แกงคั่วสัปปะรด  £8.25  Medium
Red curry with prawn and pineapple (traditionally using dried mussels). This old style, sweet and sour curry has a very distinctive taste from the dried shrimp and pineapple. Its a real Thai pedigree curry, which had not been included in Thai commercial menus, for a long time. I just wanted to bring it back for people to try, rather than them knowing only the Thai Green Curry

"Choosing a wife":

It is rumoured that in days gone by, in villages all over Thailand, there was only one sure way of knowing if the girl of your dreams was going to make you a good wife and impress your mother. That was to see her in action - pounding curry pastes!

This could be done in a number of ways. Quite openly she could be volunteered into helping with preparations for the next big celebration, under the prospective mother-in-law's watchful eye. Of course she would know that she was being watched and act accordingly. The more wily mother-in-law would pay early morning visits to the family compound of the girl, in secret, where she would have over-heard  the girl pounding the pastes for the day. She would be listening out for the impressive, rhythmical, vigorous and untiring style that would reassure them that their son had chosen well.

20 Baht: This green Thai bank note, with the portrait of our beloved King Phumiphol Rama IX is worth about 33p.   To me and most Thai's, it means a bowl of noodle soup, or roast pork on rice, or most single dish lunches.......I'm glad that you're willing to pay more than this.

About Fish......Thai people don't want to have a fish if the chef has thrown the head away. The English don't want to have a fish if it comes with the head on. Fish eyes, guts, eggs, head and fins, are the most expensive part of the fish, and are considered a delicacy in Thailand. In England with the exception of caviar and cod roe, they throw them away or just use them to make pet food.

Although the Wok and Stir Frying techniques have been adopted from the Chinese, the end results are rather different. you will find Thai stir-fries lighter, as they are generally not thickened with corn flour, and are more highly flavoured than their Chinese counterparts. Many of these are eaten as single dishes, served on rice, at lunch time in Thailand.

Stir-fried mixed vegetables. During cooking the contents of the wok are set alight, giving a distinctive smoky flavour that is very difficult for the faint hearted to create at home.

Green vegetables Thai Kitchen Style. In the classical technique there is an order to how the ingredients are added to the wok, the trick of this dish, "passed to me by my mum" is to throw everything in at the same time!

As time's gone by things have changed. In the past, nearly every house in Thailand had this water pot, with a long handled coconut shell water cup. Waiting for travellers to come by and have a drink..........Sadly This is rarely seen nowadays!

Soup is not served as an appetiser in Thailand but included as another dish in the meal. It is either spooned over the rice or taken in small sips to refresh the palate between the flavours of the other dishes. I try to encourage everybody to eat it like this, but I had to give up with my brother-in-law. Keiron, whose favourite dish is Tom yam Gung, which he insists on having as a starter.

Hot and sour prawn soup with citrus overtones. Perhaps the most famous dish of all, there are almost as many versions, as there are restaurants, "most are delicious"

A rich aromatic chicken soup with coconut milk, more or less the same flavours as Tom Yam but always with the addition of coconut milk, milk, or cream
26. Gaeng Jeud Woon-Sen  แกงจืดวุ้นเส้น  £7.25  Mild
Glass noodle soup, tasty but not spicy, thought of as good a choice for breakfast in Thailand, something for the children, or as a counterbalance when lots of hot dishes have been chosen.

A clear soup with bamboo shoots and chicken. Thought to be a remedy for a cold, because its quite peppery and warming

Another version of Number 23, Tom Yam Gung, but with fresh beef. The taste has to be much stronger and much hotter to beat the beef taste. It is renowned for sobering people up in the early hours after they have been drinking through the night

About the picture under each page of our menu and website: You might be wondering about the footer picture of our website. This is a sketch of "Poy Sang Long Ceremony" or the Old Thai New Year in Mae-Hong Sorn, a province in the North of Thailand. In the sketch, they are parading with monks in the front, followed by an important lady on the cart, followed by Buddha's figure and musicians and dancers at the back. I have never been there myself, but a friend who's been, said it was the best parade that he has ever seen. I think that this is a very fine and detailed sketch, and I wanted to include it as the background to our menu and website!

These highly flavoured dishes are a welcome addition to any meal and quite addictive. Think of them as side dishes, if you like, not suitable to have on there own, but they will add an extra something to your meal!

The Story behind Son-in-law's Eggs:
Mother-in law arrives unexpectedly after a long journey.
Daughter is out!...leaving a nervous son-in-law on his
own trying to impress with his hospitality.

While mother-in-law freshens up he hurries into the kitchen to rustle up that special something, the problem is he can't cook. he see' boiled eggs left over from the meal before, they are cold so he decides to heat them up by frying them. Meanwhile he puts all the ingredients he can find into a saucepan, sugar, fish sauce, fried onions and Tamarind, and leaves them on the stove; he nearly forgot the rice.

Busy sorting out the rice he doesn't watch the saucepan and the tamarind mixture thickens and caramelises. Hoping for the best, he pours the blackened mixture over the fried boiled eggs and creates a surprisingly tasty dish, using the most common ingredients in an unexpected way.

"I guess she was impressed"!!

Fa-Rang  ฝรั่ง........The word "Fa-Rang" in Thailand has two meanings, the first means Guava, and the second is the name that Thai people have given to White Caucasian westerners. The word came from the French Fa-ran-ce, which was the name given to the French, who came over to trade in the far east 250 years ago

Farang's Hand  มือฝรั่ง.........It is said to be bad manners to use your foot to do things, instead of hands, in front of anyone, who you do not know well. We see  Farang's using their foot to do everything, like "pointing to an object",  turning the TV switch on and off, or  "putting their feet on the table while talking to visitors". While the Thai's consider it very rude to show your feet to people that you do not know well. So in Thai "slang" the "foot" can be translated and commonly known as..... Farang's Hand  มือฝรั่ง "Meua Farang"

About Khao Neow "Sticky Rice"......

"Khao" means rice, "Neow" means sticky. In the past everybody in the Kingdom of Thailand used to eat sticky rice. Only the palace used non-sticky grain rice. Thai people call this rice "Khao Jaaw", the word "Jaaw" means king so "Khao Jaaw" means, rice for the king and his family. The majority of people in Thailand eat Khao Jaaw now. Only the people in the North East of Thailand eat Khao Neow as their stapler, the rest of Thailand, eat Khao Neow occasionally, and to make puddings. We rarely hear the words Khao Jaaw, we now call it "Khao Suay" instead. The word "Suay" means beautiful i.e. non-soggy...non-sticky.

 

Please Note:   This menu is quite large with lots of information... we are unable to provide information for all the ingredients we cook with. So please ask our waiting staff, if you have some difficulty or allergy with particular ingredients. I'm always in the kitchen to help (except when I'm on holiday in Thailand, or playing Tennis at David Lloyd's!!)

E8. Khao Neow ข้าวเหนียว  £2.15

Economically the poorest region of Thailand "Essan" has the reputation of being home to some of the most delicious dishes. "Sab" is the word used to describe the sharp, hot and delicious flavours of this food.  traditionally this kind of food is accompanied by glutinous or "sticky" rice which is eaten with the fingers. Som Tam (No E6) is the other essential in this style of eating - it makes an in formal but tasty meal

Sticky rice. A glutinous variety of rice, it's the staple food in the northern regions. Bangkok thai People say that...."The Issan people from the north east of thailand, have flat noses, because they eat too much sticky rice"
The Thai's say that ...... Lao's people (the country next to thailand in the north), have to have one hour extra for lunch, for "sleeping time" (siesta) because the eat too much heavy sticky rice

Generally accepted as acquired tastes these dishes may be scorching hot, pungently smelly, extremely salty or just plain unsociable,

We include them because they are part of the authentic repertoire and we know that some of you will want to try them at some point even if it's just to say that you have

Gaeng Som  แกงส้ม  £7.65  Hot

a mixture between a curry and a soup and best served with fish, "It has a distinctive smell, likened to smelly socks by the unknowing". My wife thought that her friend and neighbours husband had a serious problem with his feet, when the smell wafted over every evening when he came back from work.) Hot and sour and definitely addictive, if the taste is acquired!

Gaeng Liang  แกงเลยง  £6.95  Hot

Another smelly concoction, originally from kapi, fermented shrimps, and onions used in the preparation. Spicy from the addition of black peppercorns rather than chilli and containing lots of vegetables. Thought  to be particularly beneficial for pregnant women, children or if you have a cold.

Gaeng Pa  แกงป่า  £7.75  Hot

The uncensored version, a madman's curry, no coconut milk and no holds bared, extremely hot with fresh chicken or pork, for the unsophisticated villager in you!!

Nam-Prik means chilli sauce in strait translation.
These dipping sauces are served with a selection of salad or blanched vegetables. Truly a National dish, they are eaten by Thais from every walk of life and most Thai's couldn't
imagine life without them.
They are a great leveller!!

New Dishes
A trip home (Thailand) this year......
felt like a food tour. We tried to eat in every restaurant that had been recommended. Just to collect as many ideas as we could for the Thai Kitchen back here. We had one meal in a restaurant in the South of Bangkok, we had to go across a bridge to get to our table in the hut  in the middle of the lake. The dinner table was about, 1 foot high from the bamboo floor. It felt so relaxing for some of us, just to sit cross legged on the floor, but me!! I laid down, eating some and sleeping some. I thought to myself, that some day I'll have this kind of restaurant in England!!

I noticed that the Thai eating habits are changing towards healthy ingredients with lots of fresh herbs involved. There were no, really new dishes, which I had never heard of, most of them were adapted from old recipes, combined together to create new dishes. The old curry dishes which had been missing from Thai menu's for years have reappeared too!

Here are some new dishes that I managed to bring back and reproduce for you to try

Pla-Grorb-Pad-Prik-Daeng  ปลากรอบผัดพริกแกง £9.25  Medium
Stir-Fried crispy fish with Tamarind and red curry paste

Pad-Cha-Talay  ผัดฉ่าทะเล

In the past few  years, especially this year, this dish has popped up, in the menu of every restaurant, that we had been to in Thailand. It is straight forward, easy, and unsophisticated taste unlike curry. They stir fry any type of meat with basic fresh Thai herbs, adding young fresh green peppercorns and fresh lesser ginger. People feel that they can't go wrong with this dish I suppose. If you order it try to recognise the taste of the lesser ginger root and it is good for you.

Red curry with prawn and pineapple (traditionally using dried mussels).
This old style, sweet and sour curry has a very distinctive taste from the dried shrimp and pineapple. Its a real Thai pedigree curry, which had not been included in Thai commercial menus, for a long time. I just wanted to bring it back for people to try,  rather than them knowing only the Thai Green Curry

If you are not familiar with our cooking and don't know what we are good at, you should try one of our set menu's, or maybe one of our new dishes, or maybe some of these dishes, to give you some guidance. Remember that these dishes are only recommendations, it does not mean that we are only good at this lot!!

My recommendations are not to extreme and are easy to eat, you can't go wrong with these dishes. But to be honest it all depends on what you like, and I believe that all of our dishes are good!!

A Rich Beef curry with peanuts and potatoes, included in most wedding celebrations, as it is difficult to prepare, and uses the rare and expensive potato.
7. Pad Pet Talay  ผัดเผ็ดทะเล  £8.55  Hot
A rich aromatic , hot curry with seafood, it is very popular in Thailand, and a favourite with most of our own staff.
9. Gung Pad Pong Garee  กุ้งผัดปงกะหรี่  £9.25  Medium
Stir-fried curry with crab claws or King Prawns and vermicelli, thickened with egg and flavoured with celery.
10. Panaeng Mu  แกงแพนงหมู  £8.75  Medium
Stir-fried pork curry, with a rich, thick sauce, flavoured with Kaffir lime leaves.

Green vegetables Thai Kitchen Style. In the classical technique there is an order to how the ingredients are added to the wok, the trick of this dish, "passed to me by my mum" is to throw everything in at the same time!

King prawns with sweet basil, chilli and garlic, stir-fried in a hot flame. This has become one of our most popular dishes, which I am really pleased about as it's dead simple to make!
