Gung Chae Nam-Pla - Fresh Raw Prawn Salad - In the Issan (Northeast Thailand), this dish is always prepared with fresh raw prawns,  In essence the prawns are "cooked" in the lime juice, which induces chemical changes in the prawn meat. Garnish with lime wedges and serve with sticky rice or Thai jasmine rice.
