Ingredients 8 slices white bread 1lb fresh prawns, shelled and de-veined 4 ounces ground pork 1 egg 1 tablespoon, Coriander root, finely chopped 2 clove of Garlic, finely chopped 1teaspoon, Thai white pepper powder 2 teaspoon, Thin soy sauce 1/4 teaspoon, sea salt 2 tablespoon White sesame seeds, vegetable oil
Method 1. Chop the prawns finely 2. Mix the prawn and pork together. 3. add the chopped coriander, chopped garlic, salt, pepper 4. Add beaten egg and thin soy sauce. Mix well. 5. Spread on the bread smoothly. 6. Sprinkle with white sesame seeds. Store in the fridge until needed, (maximum 24hrs)
Cooking 1. Heat oil in wok and wait until it is hot (just before smoking). 2. Place bread in hot oil face down until golden colour. 3. Turn over for a further 30 seconds 4. Remove from wok and place on paper to remove excess oil. Serve with cold fresh cucumber slices and sweet thai plum sauce. |
