Khao Kup Gapi
Fried Rice and Shrimp Paste

Fried Rice and Shrimp Paste
Ingredients
3 cups of steamed jasmine rice
1 tablespoon of minced garlic
1 tablespoon of shrimp paste - gupi
1 tablespoon of water
1 tablespoon of fish sauce - nam pla
1 teaspoon of palm sugar
 1/2 cup of cooking oil

Method
1. Preheat the oil, in a  wok over medium heat.
2. Fry the garlic until fragrant
3. add the shrimp paste - gupi with 1 tablespoon of water, stirring continuously.
4. Add the sugar and fish sauce and reduce the heat.
5. Add the rice and stir to mix well, then remove from the wok.

Accompaniment
Ingredients

3 eggs
4 tablespoons of shallots sliced thin
3 tablespoons of fried dried shrimp
5 tablespoons of shredded green mango
3 tablespoons coriander, coarsely chopped
2 tablespoons thai red chilli sliced thin
2 limes, cut into small squares
4 tablespoons long beans, cut into 1/4 inch pieces

Method for egg pancake

1. Heat 1 tablespoon of oil in a wok and spread the oil.
2. Beat the eggs and pour in the wok, and spread it in a thin layer over the wok.
3. When set well, remove from the wok, roll up, and cut into thin slices.


Ingredients For Sweet Pork

1 cup of pork, thinly sliced
1 tablespoon of chopped garlic
1 tablespoon of fish sauce - nam pla
1 teaspoon of dark sweet soy sauce - see eu dam
2 tablespoons of palm sugar
2 tablespoons of cooking oil
1/4 cup of water

Method for Sweet Pork
1. Mix the pork and the garlic.
2. Heat the oil fry the pork until the pork is just done.
3. Add the dark soy sauce, fish sauce and palm sugar, and continue stirring.
4.
Add the water.
5. Cover the wok and simmer until the water is dried.
6. Remove from heat.

Serving
Spoon portions of the rice into small bowls, and up-turn the shaped rice into the middle of the serving plates to form a neat mounds of rice.

Arrange the:
egg strips, sweet pork, fried dried shrimp, shredded mango, sliced green beans, chopped chilies, lime chunks and chopped shallots, around the rice mound of rice.
 
Serve immediately and Enjoy!
