This is my personal favorite, and is a quick and easy dish to make. it can also be made with, beef, pork, and seafood You Will Need 4 cups of cooked cold Thai Jasmine rice, (cooked at least 4hrs before) Ingredients 1 lb ground or minced chicken 4 whole cloves garlic 6 whole shallots, pealed 1/4 cup, mixed red & green Thai chilies 1 cup chopped long beans 1 cup holy basil leaves, 1 teaspoon ground pepper 1tbs oyster sauce 2 tbs fish sauce - nam pla 1 teaspoon palm sugar You can vary this recipe by adding a medium diced onion or sliced green onions, or a combination.
Method - Pad Grapow 1. The garlic, shallots and chilies, are ground together in a mortar and pestle. 2. In a hot wok with a little cooking oil, briefly stir fry this paste to bring out the flavour and aroma. 3. add the chicken and stir fry, for a couple of minutes 4. Add the remaining ingredients and continue to stir until the chicken is cooked through. 5. Remove from the wok and Set aside. DO NOT Clean the wok
Method - Fried Rice 1. Put 1tbs of oil into the still hot wok 2. add the cooked rice to the wok and stir-fry until heated through 3. add the pad grapow stir-fry, and stir-fry for another 3 minutes, to mix thoroughly Serving Serve with a fried egg, placed on the top. For dinner it goes well with the hot and sour tom yam soups, as well as curries and other Thai food. With the usual Thai table condiments as well as ground chilies and sugar.
