Gai Pad Lam-Yai
Stir fried chicken with Longan Fruit

You will need:
1lb chicken breast meat, thinly sliced
1lb fresh Longan Fruit, (shelled and de-stoned),
 or 1 tin of Longan, drained
6 ounces of bell peppers, medium sliced

2tbs oil

Marinade
2 teaspoons seasoning soy sauce
1 teaspoons rice starch
1/4 teaspoon sea salt

Sauce
2 teaspoons sweet soy sauce - see eu dam
4 tablespoons water
2 tablespoons palm sugar
1 tablespoon white rice vinegar
1/2 teaspoon rice starch

Method
1. Mix chicken with marinade.
2. Soak longans in salted water for 15 minutes, and drain.
3. Stir-fry chicken in 2 tbsp oil until done.
4. Add red bell pepper, longan and sauce.
5. Stir well for about 1 minute until sauce thickens.

Serve with thai jasmine rice.
