Gai Pad Prik
 Thai Chicken or Pork with Fresh Green Peppercorns

Ingredients
3 tbs of peanut oil
1 cup of chicken or pork, cut into bite sized pieces
1 cup of vegetables (either cabbage, long beans, or broccolli,
or a mixture of beans and broccolli
3 tbs of red curry paste
4 tbs of fish sauce - nam pla
1 tbs palm sugar
3-4 sprigs young green peppercorn

Method
1. in a wok stir fry the curry paste for a short while, until the mixture becomes aromatic, and a little oil is driven out of the paste by the cooking process. 2. Add the chicken and stir fry briefly, until it just begins to turn whitish.
3. Add the remaining ingredients, except the green peppercorns
4. stir until it is heated through
5. Add the green peppercorns
6. taste for flavour balance.
Note: add the green peppercorn last, as they do not need a lot of cooking time, and the sprigs should be kept intact as much as possible,
7. place the green peppercorns on the top of the finished dish.

Serve with steamed Thai jasmine rice, and garnish with lime and Thai basil leaves.
