Marinade 2 tbs seasoned fish sauce (see below) 2 tbs ricestarch 1 tsp crushed black pepper 2 tbs garlic, chopped 1/2 cup shallots (purple onions) finely sliced 1/2 cup green prik chee-fa or jalapeno peppers, sliced 1/2 cup red prik chee-fa or jalapeno peppers, sliced 5 tbs fish sauce - nam pla 2 tbs dark sweet soy sauce - see eu dam 2 tbs palm sugar 2 tbs sesame oil
Method 1. Slice the beef, and pound the slices thin with a meat hammer or mallet. 2. Mix the marinade ingredients and combine with the beef 3. marinade for about 2 hours. 4. In a large skillet or wok heat some oil, 5. sauté the beef, marinade, garlic, shallots and chilies for 3 minutes. 6. Add the remaining ingredients and sauté for a further 2-3 minutes until cooked. Serve over Thai jasmine rice 
Seasoned fish sauce: take 4 tablespoons of fish sauce, add a tablespoon of Thai chili peppers, sliced thinly. Store in a stoppered jar for 1 week in the refrigerator, before use then it is ready to use. Back
