Method 1. Mix the marinade, rub into both sides of the fish 2. leave it to stand, covered, in the marinade in a cool place, for at least an hour.
1. Remove the fish from the marinade 2. allow it to drain. 3. Transfer the remaining marinade to a small saucepan 4. add 2 tablespoons of fish sauce, one tablespoon of sliced jalapeno, and one tablespoon of grated ginger. 5. Simmer to reduce to a sauce like consistency.
