Ingredients 1 lb ground pork 1 tsp sea salt 1/2 cup garlic, minced 1/2 cup coriander leaves, chopped 1 tbs ground Thai pepper 1/2 cup lime juice 1 tbs lemon grass very finely chopped 1 tbs galangal very finely chopped 1 tbs shallot (small red/purple onions), chopped 1 tbs shrimp paste - gupi 1 tbs Thai chili peppers, finely chopped 1 tbs kaffir lime leaves, finely shredded
Method 1. Make sure the lemon grass, galangal, and lime leaves are very finely chopped (put it through a food processor or grind in a mortar and pestle). 2. Put all the ingredients in a large mixing bowl 3. Combine the ingredients, by squeezing the mixture through your fingers until thoroughly combined 4. stuff the mixture into, either a synthetic collagen, or a natural hog casing (sausage skin) and form 4" sausages, or form into patties or meatballs. 5.
