Sweet & Sour Spareribs

You will need
1lb meaty pork spareribs

Ingredients - Marinade
1 tablespoon thin soy sauce
1 teaspoon fish sauce - nam pla
1 teaspoon Thai pepper powder
1 tablespoon cornstarch
1 tablespoon rice wine

Ingredients - Sweet & Sour sauce
1/2 cup tomato sauce
1/4 cup freshly grated ginger
1 tablespoon rice vinegar
1 tablespoon palm sugar
one teaspoon fish sauce - nam pla
one teaspoon Thai pepper powder
3 cups beef stock

You also need
1/4 cup prik chee-fa, or jalapeno, sliced
1/2 cup fresh pineapple chunks
1/2 cup shallots, sliced
1/4 cup pickled ginger, shredded
1/2 cup tomato "meat - pulp"

Method
1. Mix the marinade ingredients and marinade the ribs for 4-6 hours in a cool place

2. Drop the tomatoes in boiling water to loosen the skins, and peel and quarter them, then discard the seed pulp and chop the 'meat' to yield half a cup

3. Fry, broil, or barbeque the ribs until golden brown

4. In a small saucepan or wok mix the sweet & sour sauce ingredients
5. bring to a boil
6. Simmer for about 15 minutes until slightly thickened

7. Strain out any lumps that have formed
8. Heat some oil in the wok or a frying pan/skillet until very hot (smoking)
9. add the chili, pineapple, tomato, onion and ginger
10. stir fry until aromatic
11. Add 1 cup of the sweet & sour sauce mix
12. In a small bowl combine 1 tablespoon of cornstarch with 3 tablespoons water
13. add this to the mixture to thicken it
14. add the remaining sauce
15. Transfer the sauce to a sauce jug

16. place the ribs on a serving platter
17. Drizzle a little sauce over the ribs
18. serve the ribs and the jug of sauce together
