You will need
1 pomfret, or any similar (flat) fish will do

Method
1,
Clean the fish
2. score the sides with several cuts to allow the marinade to penetrate.

Marinade ingredients
1 cup straw mushrooms, thinly sliced,
2 tablespoons grated ginger
1 tablespoon sliced, prik chee-fa or jalapeno pepper
2 spring onions, finely sliced
2 tablespoons fish sauce - nam pla
1 tablespoon thin soy sauce
1 tablespoon shrimp paste - gupi
1 teaspoon pepper powder
1 tablespoon whiskey

Method
1. Mix the marinade ingredients
2. rub them into the fish, leaving it to marinade for about an hour in a cool place.
3. Transfer the fish, and the marinade, to a dish large enough to hold it
4.
Transfer the dish to a bamboo steamer (see note above), and steam for about 20-25 minutes
5. Remove the dish from the steamer.

serve with Thai Jasmine Rice and the usual thai table condiments
